A captivating Instagram reel showcasing a Korean family’s traditional vegan Kimchi-making process has recently taken the internet by storm. Uploaded by @3genfam, the video depicts a group of women seated on the floor, surrounded by ingredients spread across containers and newspapers.

The method begins with the meticulous preparation of cabbage, where the bases are trimmed and the heads halved before being soaked in a saltwater bath. After soaking, salt is delicately sprinkled between the leaves, and the cabbages are carefully stacked in transparent plastic bags, along with saltwater. This same process is repeated for ponytail radishes.

The reel also reveals the intricate steps involved in crafting the Kimchi paste from scratch. Rice flour and vegetable broth form the base, mixed with chili powder, and blended pears, ginger, garlic, onions, and red chilies. Additional ingredients such as palm sugar, stevia, sesame seeds, and the unique sea staghorn are meticulously incorporated.

Following the preparation of the paste, the cabbages and other vegetables are washed, drained, and mixed with the paste by hand in a large vessel. The paste is then generously spread over the cabbage leaves and wrapped, while also coating the radishes and mustard greens. The finished Kimchi is packed into containers, ready for fermentation or immediate consumption.
